Here we work with around ten different restaurants with everything from neighborhood pubs, brasseries, pubs or quick simple lunch spots. So here's what your workday looks like You start your workday by going through the prep list and mise en place. You grab a coffee by the cutting board and plan and structure the day. Then it's just time to get started with the preparations. A few hours later it's about cleaning the kitchen, having a meal with your colleagues before you set up for service. During service you run the kitchen from the pass or grill. You communicate well with the serving staff and make sure guests get what they ordered and are satisfied with the food. This happens, as you know, at a high pace. That's why the preparations are incredibly important. After service you roll up your sleeves, write prep lists with your colleagues, make sure orders are placed and that the flow is maintained, and you clean the kitchen before it's time to finish your shift.
